Ingredients

1 pound boneless, skinless chicken breast
2 garlic cloves, minced
1 onion, diced
1 can black beans, drained
1 can pinto beans, drained
1 can corn, drained
1 can diced tomatoes with green chilies (do not drain)
1 chopped bell pepper
2 cups fat free chicken broth
1 ¼ oz taco seasoning

Instructions

1.To cook on the stove:
2.Cook onions for 6-8 minutes in a tsp of olive oil until tender.
3.Add the garlic and cook for 1 minute.
4.Add the remaining ingredients and simmer.
5.Cover and cook 30 minutes.
6.Shred the chicken and return to pot.
7.Crockpot option:
8.Add all ingredients to the crockpot and cook on low for 4 hours or up to 8 is fine.
9.The longer it cooks, the more flavorful it will be.
10.If you prefer a thicker soup, add a can of refried beans.
