Ingredients

4 boneless, skinless chicken breast (2 pounds)
4 ounces Colby Jack cheese shredded
¼ cup green bell pepper, chopped
1/8 tsp cayenne pepper
½ tsp black pepper
1 Tbsp ground cumin
1 Tbsp chili powder
2 Tbsp olive oil
2 Tbsp clilantro leaves, chopped
2 tsp Kosher salt
1 clove garlic, chopped
2 Tbsp chopped red onion
1 medium roma tomato, diced

Instructions

1.Preheat an oven to 350Preheat oven to 400 degrees F (175 degrees C). Grease 24 muffin cups, or line with paper muffin liners. Whisk together the flour, pudding mix, baking soda, salt, cinnamon, ground ginger, allspice, cloves, and crystallized ginger in a bowl; set aside.
2.Mix oil, cilantro, chili powder, garlic, cayenne, cumin and salt in a bowl; add chicken and toss.
3.Put chicken on a foil-lined baking sheet and arrange the onion, tomato and green pepper over each. Roast until the largest piece is cooked through, about 20 minutes. Thermometer inside should read 165.
4.Remove the chicken from the oven and top with cheese and serve.
