Ingredients

4 cups chicken broth
1 can (14 ½ oz) diced tomatoes with basil, garlic and oregano
1 medium uncooked zuchinni, sliced ¾” thick
1 large carrot, diced
1/4 tsp pepper
½ tsp salt
2 ¾ Tbsp grated Parmesan cheese
2 Tbsp extra-virgin olive oil
1 rib of celery, diced
1 can minestrone soup
1 can cannellini beans, drained and rinsed
Add 1 pound potatoes (optional)
Thick soup made from hearty ingredients makes a great appetizer or main course. Pair with a salad and loaf of fresh, French bread.

Instructions

1.Add to crockpot 4 qt or larger.
2.Cook on low for about 6 hours until vegetables are tender.
3.Top with cheese to serve (optional)
